Protein Pancakes

Another of my favorite healthy breakfast recipes is protein loaded pancakes.

This is something I truly look forward to before going to bed at night, and I usually make it for a Sunday morning treat.

Once you try it you won't believe it's good for you!

You Will Need:

-2/3 cup whole grain pastry flour

-2/3 cup vanilla whey protein powder

-2 packets stevia or other sugar substitute

-1/2 cup 1-minute oats

-2 bananas, mashed

-2 tsp. baking powder

-2 tbs. fat-free plain yogurt

-2 large eggs

Directions:

1. Combine flour, oats, stevia, protein powder, and baking powder. Mix thorougly. Add and mix-in bananas, eggs, and yogurt.

2. Heat a non-stick skillet over medium high heat and spoon approx. 1/2 cup of batter into skillet. Cook until golden brown (about 1-2 minutes). Flip and cook for another minute.

3. Repeat until all batter is used. Enjoy!

(Makes 2 servings -- 6 pancakes total)
